Naoko Jokoji has been passionate about Japanese fermentation, especially miso since 1944 and makes her own miso.
Ever since she became a Natural Holistic nutritionist, she started to share Japanese fermentation culture in Canada.
She has taught numerous fermentation classes in Tokyo, Japan for the Canadian School of Natural Nutrition and Cooking school.
